This is a favorite for any meal! Another great use for the Wild Game Sausage we make here on the Ranch! Equally as delicious when made at home, or over the campfire, this is one of those recipes I never measured out until I had several requests for a recipe. I hope you enjoy our Biscuits and Gravy as much as we do!

Rockin’ 7 Biscuits and Gravy
Biscuits
- 2 Cups Flour (plus a little extra for rolling out dough)
- 2 1/2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1/3 Cup Butter ((5 1/3 Tablespoons))
- 3/4 Cup Milk
Gravy
- 1 Pound Breakfast Sausage
- 5 Cups Milk- divided
- 1 Cup Flour
- 1/4 Cup Maple Syrup
- 1/4 teaspoon Ground Black Pepper
- 3/4 teaspoon Salt
For the Biscuits
- Heat oven to 375. Line a baking sheet with parchment paper.
In your mixer bowl, combine the dry biscuit ingredients. - Add and cut in the butter until mixture is crumbly. You can do this by hand with a biscuit cutter, or put your mixer to work.
- Gradually add milk while mixing, and stop mixing as soon as everything is just combined. You want things to be mixed and held together here, but not a gooey glob. Try not to over-mix. Add more milk if it’s too dry, or more flour if it’s gooey.
- Sprinkle a little flour on a clean work surface, and dump your dough mixture out. Pat down, and spread out until it’s about 1/2″ thick, flouring up your hands as needed to keep from sticking.
- Now, cut your biscuits and place on the prepared pan. Combine any remaining dough and repeat the process until all the scraps are used up. The number of biscuits you get will depend on how thick you like them.
- Bake for 9-12 minutes or until just starting to brown, and no longer gooey in the middle.
For the Gravy
- Brown your sausage in a good sized skillet or pot.
- While sausage is browning, whisk together 2 cups of the milk and 1 cup of flour. Add the salt, pepper, and maple syrup, then pour into the pot or pan of browned sausage.
- Add the remaining 3 cups of milk and stir everything together over medium heat until the gravy reaches your desired thickness.
If you leave the pot unstirred, your gravy will turn into globs stuck in the bottom of the pan, so it’s best to keep an eye on it 😉
You can always add a little more milk if it gets too thick. - Serve with biscuits and enjoy!
