Every now and then you just need something yummy to eat! I cannot tolerate gluten, but was craving something delicious- so I came up with this gluten free Peanut Butter Cookie recipe and was happy to find that the whole family loves them! They are super simple, healthy, and so delicious! They have quickly become a family favorite- and Shelby even says they’re her favorite ever 🙂
Rockin’ 7 Gluten-Free Peanut Butter Cookies
A gluten-free peanut butter cookie recipe that the whole family loves!
- 1 Cup Peanut Butter
- 1 Egg
- 3/4 Cup Coconut Sugar
- 1 teaspoon Vanilla
- 1/2 teaspoon Baking Soda
- 1 dash Sea Salt
- 1/4-1/2 Cup Chocolate Chips
Instructions-
- Preheat oven to 350 F, and line a baking sheet with parchment paper.
- Mix all ingredients, and drop onto your baking sheet using a dough scoop or two spoons. We get around 16 cookies.
- Press each cookie very lightly with a fork to flatten a tiny bit- not too much unless you like them crispy.
- Bake at 350 for 8 minutes.
Baking time may vary, but they do firm up as they cool! Ours still look a little gooey in the center, but have a tiny bit of golden color starting on the edges. Once they cool a bit, they are perfect 🙂 - Enjoy!!
